Hand picked fruit is slowly pressed over 6 hours and then cold settled for another 48 hours before fermentation in 80 % stainless steel tanks and 20 % 300 litre oak barrels. The wine is kept on fine lees over winter and bottled with about 15 g L of residual sugar, which beautifully balances the high natural acidity of the
